My favourite breakfast right now: chia seed pudding

“chia” is the ancient Mayan word for “strength”

Chia seeds are rich in protein, containing all essential amino acids needed by the body for proper muscle growth and tissue repair. They have high levels of omega 3 fatty acids, calcium and magnesium. Also, being high in fibre, they help reduce inflammation and improve the digestion and detoxification process - which help support a better nutrient intake.

Chia seeds are hydrophilic, with the ability to absorb thirty times their weight in water, they help regulate body fluid levels and retain electrolytes with their gel-like structure. Research has uncovered the benefits of this form of hydration, being up to twice as hydrating as drinking water!

I have been loving this quick and easy breakfast, you can meal prep it in jars at the start of the week and it's super versatile!

Recipe:

  • 1/4 cup chia seeds

  • 2 tbsp coconut flakes

  • 1 tsp maca powder and ceylon cinnamon

  • Dash of vanilla

  • 1 cup plant milk of choice (I love coconut or hemp milk)

  • Optional: sweetener such as maple syrup or honey

My favourite toppings are; berries, pomegranate, banana, nut butter, nuts/seeds, bee pollen, cacao nibs, raw honey
